Soup season. One of the many reasons I love autumn.
Whilst having a browse for recipes using curly kale, I happened across a recipe for tuscan bean soup.
It is really delicious. So delicious in fact, I have made it three times already. A definite success.
Lacking a few of the ingredients, I didn't add the parmesan rind and used butter beans instead of cannellini. But soup is forgiving. It was enjoyed with some granary bread, a perfect warming meal for autumn days.
Give it a go. I promise you won't be disappointed.

ReplyDeleteMmm, loved the sound of this so much I ran out into the garden to pick some kale ... Blowing a gale and chucking it down .... Only to find my chucks have stripped the last of the kale completely bare! Oh well never mind, I will definitely try it next time xxxx

ReplyDeleteThis looks so good, just my sort of thing. We've had various soups for lunch every day this week, I think! I save my armesan rinds and keep them in the freezer for soups and stock and such like. xx
ReplyDeleteIt does look delicious, but not for me ... neither garlic nor celery agree with me lately :( But yes, it's definitely soup season around here too ... Green Velvet (a garlic and celery free version) is my favourite just now :)
ReplyDeleteThis looks gorgeous and the kale is so healthy. Today I had a homemade carrot and corriander - I think I actually eat healthier in the autumn/winter.
